pecans, look for uniform, clean shells. There is no correlation
between the size of the nut and quality of the meat. |

On the average, one
pound of inshell pecans will yield one-half pound of edible
meat. That is about two cups. |

When buying shelled
pecans, look for plump meats which are fairly uniform in
color. Make certain that pecans you purchase during the
summer months were stored in a freezer. |

Pecans, either shelled
or unshelled, if kept in an air tight container, will last
in refrigeration for up to nine months and in the freezer
for up to two years. |

Frozen pecans do
not need to be thawed prior to use. |

Pecans can be re-frozen
numerous times without loss of quality. |
